Cute Bear Bento – Gluten Free Meatloaf Recipe

Well it is here her first day back to school and she was very excited.  She wanted me to use the new Suzy Zoo mold for her 1st bento. I reviewed previously about this item so check that out.

We made for dinner the night before some turkey meatloaf stuffed peppers.  I made hers of course GF.  With a little of the meat I always try to set aside a meal or two for my bento.  My hubby is not huge on leftovers, don’t get me wrong he will eat whatever I put in front of him but variety nightly is best at our house, so I don’t her ‘This again”….

This is a great tip by the way cause it helps my freezer stash if I make something and then at the same time use some of it to cook in a small container for bento.  (silicon cup cake liners work great for this! also muffin tins) This way everything is baked or cooked and no left overs,  just bento additions waiting in the freezer- YEA! Makes mornings go by fast when you just plop something in…

The bear came out so cute! I used some potato casserole with a meat flower on top heart sausage, little pickles, yellow peppers, cherry tomato on top of some ral cherries and decorated the bear with a meat nose and eyes with mustard smile and in ears for decoration and a cute bow pick to make her girly!

My Gluten Free Turkey Meatloaf (makes 2 mini loafs perfect for bento)

1 slice Udes GF sandwich bread chopped up into small bits

1 egg with a splash of coconut milk whisked together

1 patty of ground turkey (comes in package of 4)

1/8 teaspoon mustard powder

1 teaspoon ketchup

salt and pepper

Directions :

Mix egg mixture with chopped bread until mostly soaked up

Add all spices and turkey patty mix well

Put into silicon cup cake liners or muffin tin

Bake 350 for about 15 min until internal temp is 170 degrees

Let cool then either put in fridge or freeze

Momma Says: Take some extra and make a stash your bento will be done in the morning with a flash!  ;P
