Yummy GF/DF Pumpkin Bread recipe

With the end of summer now here (insert sigh) and fall now here (yea I love sweaters) I am thinking of all the wonderful rich smells of baked goods with cinnamon, apples and pumpkin.  I thought I never see any GF yummy baked stuff for fall and thought I can figure this out and make it easy on me.

So I opened my pantry and found a can of organic pumpkin (yes I do keep it on hand LOVE it) and some Bob’s Red Mill wonderful bread mix and though I wonder if this will work.  I had nothing to loose and everything to gain so I began to construct what does Pumpkin bread have in it vs this bread mix. I figured I would make the Pumpkin wet mix like if I was to make a reg sweet bread ala banana bread mix and then just use Bob’s for the dry mix. So with using the bread machine I was hoping for the best.

It turned out SO YUMMY and just the right amount of moistness. The Topping put it over the edge.  I hope you enjoy…

If using oven to cook bread set oven to 350 and pour mix into 2 greased loaf pans bake for about an hour and 1/2 Checking to make sure it is done at 1 hr and then add additional time if needed.   Cool 10 min then transfer to rack or plate and slice when completely cool if you can wait (I couldn’t).

Julies Yummy GF Pumpkin Bread (also Dairy Free)

TBL= table spoon    tsp=teaspoon

Ingredients used

Dry Mix

1 pkg Bob’s Red Mill wonderful bread mix

(+ up to 1/2 cup GF Bisquick as needed to make dough not to sticky)

Wet Ingredients

1 Cup organic pumpkin puree

2 tsp Cinnamon

1/2 tsp nutmeg

1/2 tsp clove

1/4 tsp ginger

1/2 Cup sugar

1/2 Cup milk (I used coconut milk)

2 eggs

1/4 Cup melted and cooled butter (I used Earth Balance Organic  buttery spread)

Additional ingredients

aprox 1/4 to 1/2 Cup Chopped apples (or raisins would be nice)

Topping

1/4 Cup almond meal (omit if any allergies and use less butter)

1/4 Cup GF oatmeal

2 TBL Brown Sugar

2 TBL Butter ( I used Earth Balance Organic buttery spread)

1/4 tsp Cinnamon

*I used a bread machine on the white bread regular crust setting ( I wound up adding 15 min to cooking time) So check your machine and bread to see if cooked completely.

1.  I first mixed all the Wet ingredients in a separate bowl and then poured it into the bottom of my bread machine

2.  I poured the package of Bob’s Red Mill on top of wet mix. In the center of mix in a little valley I poured the yeast package.

3.  Set the machine to white bread (check your machine settings for what is best to make regular loaf)

4.  I noticed it was very wet while it mixed so I added some GF Bisquick (I am sure GF flour mix would also work) til it was just able to mix better and not be to soupy.  I also helped it along in the mixing process with a spatula ( use carefully or do this step in a separate bowl before baking to not ruin machine or yourself)

5. Machine then left to rise then it kneaded again and I sprinkled a tiny bit more dry and helped it knead once more.

6. While it was doing its thing I made the topping

7.  My machine beeps at a time to add any additional fruits or nuts. this is where I added the chopped apples.

8 When Baking cycle started I used a spatula and spread out dough even in pan and then pressed the topping into the top of the bread mix.

When my machine beeped I checked the bread with a wooden skewer and it did not come out clean so I added 15 min baking time and that did the trick.

Momma Says: Even though I had to help the machine knead the bread (or should I say it was a mixing more) this bread turned out fabulous and we all loved it warm out of the oven with some GF DF buttery spread on top. The smell also was great. Cannot wait to make french toast with any leftovers,  that’s if we have any!
