Best Moist GF Pumpkin Cake

I hit it good on this gluten free yummy treat for my kiddo. One thing I notice when I bake GF it has a tendency to get dried out easily, By 24 house  if it is not eaten for sure. Even store bought breads??? Must have something to do with the rice flour or something. But this cake has lasted two days now and is still moist and yummy even though we put it in the fridge! This recipe is easily adapted to sugar free you will see in ” ( )”.

As allways I adapted from family recipes and many other cake recipes to get this one. I love to experiment and have a “Happy Accident”.  In some way I feel like I take what my Mom or Grandma has made and put my own twist on it.  Especially when cooking GF for my kiddo or Sugar free for my Dad. You might not allways get a winner but it is fun for Mom and kiddos to get in the kitchen and bake together.

I have had luck when I add to the GF recipe 1/2 cup of applesauce . It really helps keep in the moisture. I think that was key in this recipe. I will have to test this on other things I bake. I even did this recipe again and made some mini cakes (square cupcakes) and they were a hit my hubby wont stop eating them all.

Gluten Free Moist Pumpkin Cake Recipe

1. sift dry ingredients

1 Cup Bobs Red Mill all purpose flour

1 tsp. Baking Powder

1/2 tsp Baking Soda

1/2 tsp salt (omit if you like)

1 tsp Xanthan Gum

1 tsp Cinnamon*

1/8 tsp allspice*

1/8 tsp ground ginger*

*or use about 1 1/4 tsp pumpkin pie spice*

sift all above dry ingredients into a bowl set aside

2. Mix eggs and sugar

2 large eggs

7oz sugar  aprox (1/2 c + 1/3 c) (Or use Stevia for Sugar Free recipe)

1 tsp Vanilla

Beat on high until fluffy, takes about 5 min

3. Add applesauce and pumpkin

1/2 C apple sauce ( I use organic sugar free)

1/2 C canned pumpkin (not pie filling just plain pumpkin)

Beat on low until it just comes together.

4. Slowly add flour mix 1/4 c at a time

mix until it just comes together do not overbeat

5. Pour mix into prepaired baking pan (mine is 8×8). You can also use parchment on bottom if you do not want to grease/flour pan.

6. Bake at 350 for about 20-25 min , when toothpick comes out clean.

7. Cool in Pan then frost.

For Frosting

6 oz Confection sugar (For Sugar free version use sugar free vanilla pudding -aprox. half the package +  stevia to taste)

3 TBL. Butter, cubed and softened

4 oz Philly Cream Cheese, cubed and softened

1/2 tsp cinnamon (to taste)

Whip all ingredients until fluffy

My kiddo had fun making a face piping the frosting onto cake with a decorator bag. In a pinch I have used a plastic baggie with one tip snipped off the bottom of the baggie.  I found a cheap decorating bag set that has a couple tips and she has fun thinking she is a creative baker with it.  You can even add a few drops of food coloring to a couple different bags with the icing  before snipping bag and it is fun for the kiddos to mush the  color through icing.

Momma Says: Cinnamon and other fall spices have alot of health benifits too from warding off cancers to regulating blood sugars, it has anti bacterial properties and has even helped those with infections and tummy troubles. I love it for the warm inviting aroma, that is why I love Chi tea so much- YUMMY!

*As with anything if thinking of supplimenting Cinnamon in your diet for health reasons before taking any herbs allways talk to your doctor first.
